Next weekend is the Shrovetide and what better way than making bowls à la Schakenda - chief baker! This weekend we were visited by law, and since I got Schakenda bakebok for Christmas from her this was a great opportunity to test out the proverbial buns his. Bowls are absolutely NOT done in a jiffy (I spent 3 hours from when I started kitchen prep table until they were finished). They will be a half hour in the kitchen kneading machine. But it is worth all the noise - the dough will be fantastic to work with, and the bowls are airy and juicy. Forget everything you learned about the lukewarm kitchen prep table liquid to yeast - have milk up in straight from the refrigerator and let the dough warm up of all the kneading. When it is 20 to 30 degrees, which will provide kitchen prep table perfect conditions for yeast. In baking book reads extensively about how the fermentation process works - in addition to the story of the start of the bakery in Lom. Cookbook won that year's cookbook in 2009, and can be safely recommended.
Recipes on buns a la Schakenda 1 kg flour l h-milk (cold) 150 g sugar 15 g salt (this makes the buns slightly salty - you can easily use 1-2 tsp instead) 15 g cardamom 1 large egg 50 g fresh yeast (for sweet buns) 150g butter, cubed 1 beaten egg to brush with all ingredients minus the butter in the bowl and let it knead for 15 minutes. Add the butter and let it knead in additional 15 minutes. Place plastic over the bowl and let it rise until double in size at room temperature (it should not stand in the drawing). It may take some time before it starts to rise, so be patient! According Schakenda it is better that it has time to rise and get the right airy you than fast uplift - bathroom floor is a no-no. Bowls filled with vanilla cream Divide the dough into bowl fit all sizes. Clap bowl flat out, and put 1 to 1.5 tablespoons vanilla cream in the middle. kitchen prep table Pull the dough up around the custard so that vanilla cream left in the middle of the bowl. Squeeze dough gently together, and roll it finally gently in your hand so that the bowl will be nice shaped.
Cooking Place bowls with good distance kitchen prep table on a baking tray and leave the rest for (they are almost twice as large). Brush with the egg and let the roast for 15 minutes in oven at 180-200 degrees (depending on your oven). kitchen prep table
