This slow food cheesecake takes time, but it is worth it. The finished cake is creamy and light, without being too sweet and the little bit of mint chocolate, granite table base which can easily be made larger, it provides extra bite. You can enter mascarponen out of ordinary philadelphia cream cheese, if you can not find mascarpone or think it's too expensive (it costs eventually an arm and a leg). But you can also make your own cheese, so I suggest the homemade type.
